The traditional oven-ready Game bird. Season generously with your favourite herbs, add a little butter under the skin and slow cook for no more than 25 minutes. To guarantee plenty of moisture, cook your bird breast down and flip it for the last 10 minutes to give it that deliciously crispy top.
